Badusha | Balushahi sweet-How to make-Step by step photos

Ingredients
- Maida / All purpose flour / wheat flour– 1 cup
- Butter – 4 tbsp
- Ghee – 1 tbsp
- Oil – 1 tbsp
- Sugar – 1 tbsp
- Salt a pinch
- Curd – 1 tbsp
- Water as needed
- Oil & ghee for deep frying
Sugar Syrup
- ¾ cup sugar
- 1 cup water
- Green cardamom – 3
- Lemon juice – ½ tbsp
Preparation
- Sieve the flour without lumps.
- In a bowl add butter, curd, sugar, & salt beat well. Then add ghee, mix well.
- Add flour & water mix well, knead & make soft smooth dough.
- Then add oil knead it again, cover it & leave it for 5 min.
- For sugar syrup add water & sugar in a pan mix gently & let it dissolve.
- Then add cardamom & let it boil 7 min to get string consistency then add lemon juice to avoid crystallization. Then cut off heat.
- Divide the dough into equal size balls. Then press gently in the middle of the balls like doughnuts.
- Then make decorative edges around the balls like kai / hand muruku or we can make designs using knife or mould.
- Heat oil & ghee in a pan, put pieces one by one & deep fry on medium flame.
- Once fried flip over & cook another side.
- Once it’s turned light brown take it out. Drain on an absorbent paper.
- Immediately place in to the sugar syrup & leave it for 2 min. Then take it out & cool it in room temperature.
- Once sugar syrup fully absorbed & totally dried then store it in an airtight container & use within 5 days

Maida / all purpose flour
Sieve the flour
In a bowl add butter curd
Add sugar
Add pinch of salt
Add ghee mix well
Add maida mix well
Add water mix well
Add water litttle by little knead it & make soft dough
Add oil knead it, cover it, and leave it for 5 min
Badusha dough is ready
For sugar syrup add sugar in a pan
Add water mix well let it boil
When boiling add green cardamom and leave it for one string consistency then add lemon juice & cut off heat
Shape equal size balls
Press gently in the middle and make cavity - 1 [Easy shape]

Heat oil put prepared pieces and deep fry till light brown on medium hot oil
Once its ready take it out and drain on absorbent paper
Immediatly place it in to the sugar syrup leave it for 3 min then take it out & let it cool in room temperature

Take lemon size ball then press in the middle
Smooth and stretch the edge
Fold
Stretch the edge from first fold then again fold it
Make decorative foldings around the edge

Deep fry till light brown
Once its perfectly fried and golden brown take out drain on absorbent paper & place it in sugar syrup for 3 min & Then take it out & cool it in room temperature.
Once sugar syrup fully absorbed & totally dried then store it in an airtight container & use with in 5 days-Decorative badusha sweet
