Fried Rice-Simple & healthy lunch box recipe

Ingredients
- Basmati rice - 2 cups
- Onion - 2 tbsp
- Spring onion - 3 springs
- Carrot - 1 [cut in to thin long strips]
- Capsicum - 1 [cut in to long strips]
- Pepper powder [freshly ground] - 1 tbsp
- Tomato chilli sauce - 1 tbsp
- Dark Soya sauce - 1 tbsp
- Green chilli - 1 chopped
- Garlic- 1 tbsp
- Garam masala -1 tbsp [optional]
- Salt to taste
- Oil - 2 tbsp
Preparation
- Wash and soak basmati long grain for 30 min.
- Heat 7 cups of water in a pan, add 1 tbsp oil or ghee let it boil.
- Add basmathi rice & salt cook till 3/4 th. Then drain water, cover lid & leave it for 5 min.
- Then spread it on the plate let it cool.
- Heat pan with oil , add onion & garlic sauté till light brown then add green chilli sauté gently.
- Add carrot stripes, green capsicum strips and sauté well for 3 min. Add dark soya sauce, tomato chilli saute sauté
- Add cooked basmati rice and mix well.
- Add salt, garam masala mix well.
- Now fry on high flame for 2 minutes.
- Add chopped spring onions, freshly ground peppercorns mix well then serve hot with gobi manchurian, corn manchurian, paneer manchurian, tofu manchurian, soya chunks manchurian, veg manchurian or egg manchurian.
