Everyone loves samosa. It is easy to prepare at home. This samosa is stuffed with green peas and aloo. I am adding ajwain (Omam in tamil) for rich aroma, taste and digestion
Dont worry if anything is leftover after making Samosa. You can make crispy snacks out of unused maida dough. Make tasteful Kurma out of leftover Samosa stuff.
Ingredients
- Maida - 1/4 kg
- Salt - as needed
- Carom Seeds (ajwain)
- Ghee - 5 tbs
- Cumin Seeds - 1 tsp
- Ginger - 1/2 inch
- Potato - 3 [medium size]
- Green Peas - 50 g
- Dry Mango Powder - 1 tbs
- Red Chilli Powder - 1 tsp
- Coriander Powder - 1 tbs
- Garam Masala - 2 tbs
- turmeric powder - 1 tsp
- Oil as needed
Preparation
Samosa filling stuff
- In a hot pan take ghee and put cumin seeds and ginger
- Then add smashed boiled potato and green peas then fry for 2 mins
- Add 1 tbs of dry mango powder, red chilli powder, turmeric powder and coriander powder and mix well
- Then add garam masala, salt and fry till raw smell goes off.
Samosa Shell
- In a bowl take maida, 1 tbs ghee, carom seed and salt together (add water while making dough whenever needed)
- Then keep it for 30 minutes
- Make equal size balls (lemon size)
- Take one ball, grease it, roll into thin round shape and cut into equal halves using knife. Now what you get is semi circle
- Make a cone shape from the semi circle, fill with samosa stuff and cover it (it should look like a triangle shape)
- Dip your finger into water and stick firmly all the edges
- In a pan with low to medium flame deep fry and serve hot with green chutney or tomato or chilli Sauce
Note
- 50% wheat and 50% maida mixture can be used
Tip
- Instead of Carom Seeds you can use Cumin seeds
