Delhi carrot halwa [Traditional gajar halwa]-How to make-Stepwise pictures

Ingredients
- Delhi carrots [red]-2 cups [finely grated]
- Ghee [melted butter] – 3 tbsp
- Milk-4 cups
- Sugar-1 ½ cups
- Cardamom powder – ½ tbsp
- Almond-5
- Cashew Nut-4
- Saffron - few
Preparation
- Peel off the carrot skin and grate and keep aside (make sure that your grater hole is too thin or maximum thin).
- In a wide pan take 1 tbsp of ghee and roast (light brown) almonds, cashew nuts & chop, keep it aside.
- In the same pan add ghee & carrot sauté for 2 minutes and this make the carrot tender.
- Pour the milk to the pan and cook for 30 (or till the milk dries up) minutes in low to medium flame.
- Add sugar & cook till the mixture blend together. Then add cardamom powder, chopped nuts & saffron.
- Add ghee & stir continuously. When mixture becomes thick then cut off heat.
- Garnish with dry fruits serve cold / warm / hot
Tip
- For Instant carrot halwa use condensed milk and khoya, Khoa or mava.

Delhi carrot
Finely grate
Perfect texture of finely grated red carrot
Heat ghee in a pan then roast cashew nuts & almonds then chop
In the same pan add grated red carrot & saute till color becomes orange
Add milk & let it boil
Milk is boiling, Stir well
Milk becomes thick & stir well
Add sugar
Add cardamom powder
Add chopped nuts
Halwa mixture becomes thick, add ghee, saute continuously
Mixture blend together
Perfectly textured carrot halwa mixture-Now cut off heat
Transfer halwa to a serving bowl & garnish with grated almonds then serve hot or chilled
