Ingredients
- Rice flour – 2 cup
- Water as required[apr.1 ¾ cup]
- Salt – pinch
- Ghee – 1 tbsp
- Grated coconut – ½ cup
- Cardamom powder – ½ tbs
- Bengal gram – ½ cup
- Jaggery – 150 g
Method
Poornam (Stuffing)
- Soak Bengal gram for 2 hours, pressure cook (1 or 2 whitles) then mash it.
- Grate & cook jaggery till melts (add rops of water).
- Add grated coconut, mashed Bengal gram sauté for 2 minutes.
- Add pinch of salt and cardamom powder.
- Mix all together well.
- And this is called poornam (a stuffing which goes inside of the Kozhukkattai/modak).
Modak
- Take rice flour in a thick big pan; add water & salt mix well.
- Heat pan then pour rice flour mixture & stir consistency in medium heat (to avoid lumps) till you get chapatti dough consistency.
- Grease modak mould with ghee then fill the inner walls with rice flour dough mixture & leave some space for filling stuffing(poornam).
- Now fill the stuffing and seal the bottom of the modak bottom. Then demould & steam for 5 to 10 minutes. Then serve hot.

Wash & soak bengal gram for 1 hour
Boil bengal gram
Put boiled bengal gram and coconut in a mixer jar & coarsely grind
Grate coconut
Ground bengal gram is ready, add grated coconut, mix well
Add green cardamom powder
Add jaggery, water in a pan, let it melt and cook till thick syrup consistency
Add jaggery syrup mix well
Kadalai paruppu vellam poornam/ Bengal gram jaggery stuffing is ready
Add rice flour, water & salt mix well
Heat pan stir continuously till you get soft dough consistency
Kozhukattai dough is ready, add sesame oil, knead it & make soft dough
Place lemon size ball, place it in a modak mould & evenly spread
Outer layer of modak is ready
Place poornam
Poornam filled modak is ready
Close it with rice flour dough mixture
Remove raw modak from mould
Kadalai paruppu modak is ready
Before stemming modak/After demould
Take lemon size ball, shape circle
Place bengal gram kadalai stuffing / paruppu vellam poornam
Close shape like half circle
Place half circle kozhukattai in idli plates steam it
Place modak in an idli plates
Place prepared kozhukattai in idli cooker, steam it for 8 min
Kadalai paruppu mothagam is ready
