Adhirasam is one of the traditional sweets of Tamilnadu. The truth is; it is very difficult to prepare at the first time. If you succeed at least at 3rd or 4th time you are the real master chef. Celebrate this diwali with Adhirasam.
Ingredients
- Rice or Raw rice- 1 kg
- Jaggery - 3/4 kg
- Green cardamom powder - 1 tsp
- Oil - ½ ltr [For deep frying]
Preparation
- Soak rice for 3 hours.
- Drain the water and spread over the cotton cloth to absorb extra moisture on the rice[Apr 20 to 30 min].
- Now it is ready to grind. Put into mixer grinder and grind to fine powder (you can use tradition method to beat the rice using Ural & Ulakkai) and keep it aside (Ref. Fig.3)
- Sieve freshly ground powder.
- Heat pan with little water (aprox 2 tsp) and put grated jaggery mix well till completed melted.
- Then drain to avoid impurities.
- Pour drained jaggery to a pan cook till soft ball consistency. then cut off heat.
- Now pour melted jaggery slowly & gently onto the rice flour. Make sure that you are doing the process of pouring & mixing simultaneously. The dough mixture should not be sticky and not too hard. (Ref. Fig.12)
- You can store in refrigerator for overnight. or you can make adhirasam instantly.
- Make lemon size ball out of the dough (Ref. Fig.13)
- Grease plantain leaf / polythene paper with oil.
- Take the ball on the leaf and flatten gently and row it on the cotton cloth then deep fry till golden brown
- Then squeeze the oil (if you don’t squeeze the Adhirasam soft always) then put the fried Adhirasam over the wide pan and sprinkle green cardamom powder.
- Preserve this in an air tight container.

Note
- When the processing of melting the jaggery, take little bit of melted jaggery and put it into water. If it is not broken that is right time to add rice flour
- Instead of Jaggery use sugar for another variant of Adhirasam.
Tip
- If the mixture is too sticky roll it over on the rice flour if the mixture is too hard mix hot milk on the mixture
