Ingredients
- Urad dal – 1 cup
- Green chilli - 1 [finely chopped]
- Ginger – 1 tbsp [finely chopped]
- Coconut – 1 tbsp [thinly chopped]
- Curry leaves – 2 springs [finely chopped]
- Peppercorns – 5 [crushed]
- Rava – 1 tbsp
- Salt to taste
- Oil for deep frying
Preparation
- Soak urad dal for 3 hours. Then drain water & grind well or coarsely grind
- In a bowl add ground urad dal mixture, curry leaves, ginger, green chilli, coconut, salt, rava, & peppercorns mix well.
- Then shape vadai & put hole in the middle then deep fry till crisp & golden brown.
- Serve hot with chutney, sambar, curd rice or pongal.
Note
- You can make thayir vadai, sambar vadai also.
- Dont add too much water while grinding.
- You can add rice flour [1 tbsp] instead of rava
- For best crispy medhu vada sprinkle water & grind in wet grinder
- You can add finely chopped onion
- Use whole urad dal
- After grinding mix well the batter

Grind soaked urad dal in stone mortar
Finely grind with less water. sprinkle water then grind to smooth batter
Add onion, ginger, green chilli, coconut, curry leaves & salt mix well
Make balls
Flatten & shape vada
Drop it in hot oil, deep fry till crisp
Flip over fry both sides
Now its ready, remove it from oil
