Want to try some Diwali sweet? You can try Kesari Bath / Rava Kesari. Though it is usual sweet its unique in preparation and ingredients.
Here is the Kesari bath that is prepared without artificial color powder. Carrot juice is used for color. Nutmeg scrapes is used for good sleep. Borneo-Camphor (Pachai Karpooram) is used for rich aroma perhaps it is medicinally good that’s why it is mixed with water and served the devotees in the temples of India. No milk or saffron is required for this recipe.
Ingredients
- Sooji / Ravai [Semolina]- 1 cup
- Carrot Juice - 1 cup
- Ghee - 1/2 cup
- Sugar - 1 cup
- Water - 2 cups
- Nutmeg scrapes - 1 tsp
- Borneo-Camphor (Pachai Karpooram) - size of mustard seed
- Cardamom - 3
- Cashew nuts - 10
- Badam - 4
- Kissmiss (ular thratchai) - 10
- Salt - ¼ tsp (Add pinch of salt whenever you prepare sweets that enlightens the sweetness)
Preparation
- Scrape one piece carrot, grind it in mixer jar, extract carrot juice out of it and keep it aside
- Dry roast Sooji / Rava and keep it aside
- Put tsp of ghee in a pan and roast Cashew nuts, Badam and kissmiss and keep it aside
- Take 2 cups of water and one cup of carrot juice and pour the mixer in a heavy pan and let it boil
- Put 2 tbs of ghee to it (this avoids stickiness between the rava particles)
- Then add one cup of sugar, pinch of salt and wait till bubbles come
- Now add roasted sooji slowly and gently to the pan and mix well
- Sprinkle cardamom powder (peel off and fin ground), Borneo-Camphor (Pachai Karpooram)
- Stir till you get the Kesari consistent (It should boil and thick)
- Garnish with Kissmiss, Cashew nuts and Badam (scraped)
- That's it colorful, healthy & tasty Diwali rava kesari ready to serve

How to Make Simple Rava Kesari - Stepwise Pictures [Easy Method]
One cup white rava
One cup White sugar
Cardamom seeds and sugar
Cardamom powder
Dry roasted white rava
Ghee
Ghee roast Cashew
Ghee roast raisins
Heat pan with add 2 cups of water, let it boil then add ghee
Add Sugar & let it boil
Add dry roasted rava
Mix well & leave it for 2 min
Turn off flame, cover lid & leave it for 5 min
Add ghee
Mix well with ghee
Add cashew, raisins & cardamom powder [Rava kesari ready to serve]
