Vermicelli kofta in spinach gravy | Vegetarian vermicelli [Semiya] meatballs with rich spinach [Palak] curry

For kofta-Ingredients
- Vermicelli [semiya] – 1 cup
- Maida – 1 tbsp
- Rice flour or corn flour – 1 tbsp
- Rava [semolina] – 1 tbsp
- Garam masala – ¼ tsp
- Besan [gram flour] – 1 tbsp
- Green chilli -1 tbsp [finely chopped]
- Onion – 1[finely chopped]
- Ginger & garlic paste- 1 tbsp
- Red chilli powder – ½ tsp
- Capsicum – 2 tbsp [finely chopped]
- Lemon juice – ½ tbsp
- Sugar a pinch
- Butter – ½ tbsp
- Salt to taste
- Semolina – ¼ cup [for coating]
- Oil - ¼ ltr [for deep frying]
How to make kofta-Preparation Method
- Boil water then put vermicelli for a min then drain & keep it aside.
- Heat pan add oil onion, ginger & garlic sauté gently. Then add green chilli, red chilli powder & boiled vermicelli sauté well.
- Add besan, rice flour, maida, & sugar mix well.
- Add salt, capsicum, coriander leaves, butter, garam masala & lemon juice mix well. Then make soft dough.
- Divide the dough into equal size balls. Roll it in semolina. Make sure all the sides of the balls equally covered/sealed with semolina.
For gravy-Ingredients
- Spinach – 1 bunch
- Onion – 1 [finely chopped]
- Ginger – 1 tbsp [grated]
- Garlic – 1 tbsp [grated]
- Green chilli – 1 [finely chopped or slit]
- Cumin seeds – 1 tbsp
- Red chilli powder – ¼ tsp
- Turmeric powder – ¼ tsp
- Cumin & Coriander powder – 1 tbsp [dry roast cumin & coriander seeds then freshly grind]
- Kasoori methi powder – ¼ tsp
- Garam masala powder - ¼ tsp
- Fresh Cream or yogurt [curd] – 2 tbsp
- Salt to taste
- Sugar a pinch
- Oil – 1 tbsp
- Butter – 1 tbsp
Method for spinach gravy
- Wash spinach leaves.
- Boil water then put spinach leaves cook till soft then drain water & put it in mixer jar & grind well.
- Don’t overcook spinach as it's loses color.
- Heat oil and butter in a pan. Add cumin seeds. Then add onion, ginger & garlic saute well.
- Add chopped green chillies saute.
- Add spinach puree mix well. You can add water at this point if required. Then add turmeric & red chilli powder.
- Add cumin and coriander powder mix well.
- Add salt, sugar, kasoori methi powder and garam masala & mix well.
- Add cream mix well. Then add deep fried koftas and cook a min.
- Finally add butter and serve hot.
