Ingredients
- Soya chunks [small] – 1 cup
- Rice – 2 cup
- Tomato- 3 [chopped]
- Carrot – 1 [cut into ½ inch cube]
- Green chilli – 1[slit]
- Onion – 1 [sliced]
- Ginger & garlic – 2 tbsp [grated or paste]
- Coriander leaves – 2 springs [chopped]
- Garam masala – 1 tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Green cardamom – 3
- Star anise – ½
- Fennel seeds – 1 tbsp
- Cloves - 3
- Cinnamon stick - 1
- Bay leaves - 1
- Ghee or butter – 2 tbsp or 1 inch cube
- Oil – 2 tbsp
- Salt to taste
- Water – 4 ½ to 4 ¾ cup
Preparation Method
- Wash and soak rice for 20 min.
- In hot water put soya chunks for a 5 min the squeeze extra water then keep it aside.
- Heat oil and butter in a pressure cooker then add Green cardamom,Star anise,Fennel seeds, Cloves ,Cinnamon stick, Bay leaves sauté gently.
- Then add onion sauté till light brown then add ginger and garlic sauté for 5 sec.
- Add green chilli, carrot and tomato sauté well. Then add soya chunks, turmeric and red chilli powder sauté.
- Add garam masala and salt mix well. Then add water, salt mix well & let it boil.
- When boiling add rice mix well, cover it & cook for 4 whistles.
- Sprinkle coriander leaves & serve hot with any raita, pachadi
