Carrot potato green peas inji kootu

Ingredients
- Potato – 2 [peeled, cut into cubes]
- Carrot – 1 [cut into cubes]
- Green peas – 1 cup [fresh]
- Turmeric powder – ¼ tsp
- Curry leaves – 1 spring
- Coriander leaves – 1 spring
- Mustard seeds – ½ tbsp
- Cumin seeds – ½ tbsp
- Urad dal – ½ tbsp
- Bengal gram – ½ tbsp
- Salt to taste
- Oil – 1 tbsp
- Water as needed
For grinding
- Ginger – 1 tbsp [chopped]
- Green chilli – 1 tbsp [chopped]
- Coconut – 2 tbsp [grated]
- Put above 3 ingredients in a mixer jar, grind well with 3 tbsp of water.
Method
- Heat water in a pan add vegetables, turmeric powder cook till soft.
- Heat oil in a pan add mustard seeds, cumin seeds, Bengal gram & urad dal.
- Add curry leaves, boiled vegetables & salt sauté gently.
- Add ground paste mix well, sauté & leave it for 2 min then add coriander leaves, cut off heat & serve hot with rice
