Ingredients
- Thinai arisi [Foxtail millet]– 2 cups
- Urad dal – 1/2 cup
- Fenugreek seeds– 1 tbsp
- Sea salt or Salt to taste
- Water as needed
Method
- Wash and Soak thinai arisi, urad dal with fenugreek separately for 6 to 7 hours.
- Drain water then grind well. Transfer urad dal, thinai arisi, fenugreek seeds mixture to a bowl mix well, add sea salt & leave the batter for fermentation [approximately. 8 hours, fermentation hours differs from region to region & weather conditions].
- Grease idly plates with gingelly oil. Pour idly batter. Then steam it for 10 min.
Serve hot with coconut chutney and Sambar.

Thinai idli ingredients
Add thinai rice
Wash 2 times
Add water, soak it for 5 hours
Add Urad dal & Fenugreek seeds
Add water
Soak thinai, urad dal & fenugreek for 5 hours
After 5 hours grind urad dal with enough water
Uraddal batter is ready
Transfer urad dal batter to a container
Add soaked thinai rice, water grind to smooth batter
Thinai idli batter is ready
Add thinai batter into the urad dal batter
Add salt mix well
Thinai idli batter is ready, cover lid, Leave it for fermentation Apr[ 8 hours]
After fermentation, grease idli plates with sesame oil
Pour thinai idli batter
Steam it for 10 min
After 10 min, perfectly steamed thinai idli
Using sharp spoon, remove idli from idli plates
Foxtail millet idli is ready, serve hot with chutney or sambar
