Vegetable stew-Kerala style recipe

Ingredients
- Carrot -1 [cut into cubes]
- Green peas – ½ cup [Fresh]
- Potato – 2 [cut into cubes]
- Onion – 1 [chopped]
- Green chilli – 1 [slit]
- Curry leaves – 1 spring
- Ginger & garlic – 1 tbsp [grated]
- Cinnamon – 1 stick
- Green cardamom – 2
- Peppercorns - 4
- Bay leaves - 1
- Cloves – 3
- Coconut oil -2 tbsp
- Thin coconut milk – 1 cup
- Thick coconut milk – ½ cup
- Salt to taste
- Water as needed
Method
- Parboil carrot, beans & green peas.
- Heat coconut oil in a pan add cardamom, cloves, bay leaf, & cinnamon.
- Add onion, ginger and garlic sauté till soft.
- Add green chilli & curry leaves sauté.
- Add parboiled carrot, green peas, & potato sauté well. Then add thin coconut milk & let it boil.
- Then add thick coconut milk, & salt mix well & leave it for a min. Then cut off heat.
- Serve hot with Idli, dosa, appam, rice
