Ingredients

  • Carrot -1 [cut into cubes]
  • Green peas – ½ cup [Fresh]
  • Potato – 2 [cut into cubes]
  • Onion – 1 [chopped]
  • Green chilli – 1 [slit]
  • Curry leaves – 1 spring
  • Ginger & garlic – 1 tbsp [grated]
  • Cinnamon – 1 stick
  • Green cardamom – 2
  • Peppercorns - 4
  • Bay leaves - 1
  • Cloves – 3
  • Coconut oil -2 tbsp
  • Thin coconut milk – 1 cup
  • Thick coconut milk – ½ cup
  • Salt to taste
  • Water as needed

Method

  • Parboil carrot, beans & green peas.
  • Heat coconut oil in a pan add cardamom, cloves, bay leaf, & cinnamon.
  • Add onion, ginger and garlic sauté till soft.
  • Add green chilli & curry leaves sauté.
  • Add parboiled carrot, green peas, & potato sauté well. Then add thin coconut milk & let it boil.
  • Then add thick coconut milk, & salt mix well & leave it for a min. Then cut off heat.
  • Serve hot with Idli, dosa, appam, rice
