Chana masala | Chickpea masala gravy

Ingredients
- White chickpeas – 1 cup [Boiled]
- Tomato – 2 [chopped]
- Cashew nut paste – ½ cup
- Onion paste – 3 tbsp
- Ginger garlic paste – 1 tbsp [each]
- Green chilli- 1 [finely chopped]
- Coriander leaves – 2 springs [chopped]
- Channa masala – 1 tbsp
- Cumin powder – ½ tbsp
- Coriander powder – ½ tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tbsp
- Cumin seeds – ½ tbsp
- Sugar – ½ tsp
- Salt to taste
- Butter – 2 tbsp
- Oil – 2 tbsp
- Water as needed.
- *Channa masala – Poppy seeds-1 tbsp, star anise- ¼ , cloves-2, green cardamom – 2, coriander seeds- ¼ tsp, cumin seeds-¼ tsp, dry red chilli – 1, pepper corn – 3, cinnamon stick -¼, cassia – ¼, bay leaves- ½ , fennel seeds-¼ tsp, black cardamom – 1
- Dry roast all ingredients, then grid to smooth powder
Method
- Heat butter & oil in a pan, add cumin seeds then add onion paste sauté till raw smell out.
- Add ginger, garlic paste, & green chilli sauté gently. Then add tomatoes cook until the raw smell out. Add water if required.
- Add boiled chickpeas mix well then add turmeric, red chilli powder, freshly ground channa masala powder, cover lid & cook it for 5 min.
- Add cashew nut paste, coriander, cumin powder, salt & sugar mix well & let it boil.
- Add chopped coriander leaves & cut of heat. Garnish with butter and serve hot with rice, or chapati.
