Ingredients

  • Rava[Semolina] - 1 cup
  • Curd - ½ cup
  • Water as needed
  • Carrot [ grated]- 1 tbsp
  • Cashew nut - 4 [roasted with ghee and chopped]
  • Green chilli - 1 [chopped]
  • Curry leaves - 1 spring
  • Ginger - 1 tbsp [grated]
  • Coriander Leaves - ½ cup [chopped]
  • Mustard seeds - 1 tbsp
  • Bengal gram - 1 tbsp
  • Urad dal - 1 tbsp
  • Turmeric powder - a pinch
  • Asafetida - a pinch
  • Oil - 3 tbsp
  • Salt to taste

Preparation

  • Mix 1 cup of rava with ½ cup curd and ¼ cup water and salt mix well (general Idli batter consistency) and leave it for 2 hours. Particle of Rava size becomes 2 times bigger
  • Heat oil in a pan then add mustard seeds once it’s crackled add Bengal gram, urad dal, asafetida green chilli, ginger, carrot, turmeric powder and curry leaves one by one then sauté gently.
  • Cut off heat then add chopped coriander leaves.
  • Put these seasoned ingredients onto rava batter mixture
  • Heat idli cooker with water & let it boil.
  • Then grease idly plates with oil and pour rava batter mixture in each cavity.
  • Place it in boiling water, cover lid and steam it for 15 min.
  • Then Serve hot with coconut chutney.

Note

  • Don’t add too much water.

  • Add turmeric while seasoning and lemon juice for Lemon Rava Idli
