Ellu Seedai [Sesame jaggery balls]

Ingredients
- Rice - 1 cup
- Jaggery – ¾ cup
- Green cardamom powder - ½ tbsp
- Roasted sesame seeds – 2 tbsp
Preparation
- Soak rice for 3 hours. Wash and drain extra water. Grind to nice
- Heat pan with 1 tbsp water then add jaggery mix well. Once jaggery is melted cut of heat
- Add melted jaggery to rice flour & mix well.
- Add roasted sesame seeds and mix well
- Grease your palm with oil & roll to ball shape and deep fry till golden brown in medium flame
Must see Note
- Take a pinch of melted jaggery and put into water. If it is not dissolved then it is in right consistency else heat the jaggery for some more time repeat the test.
- Before fry balls gently press middle of each balls else it would crack when frying.
- For sugar seedai we use sugar syrup in rice flour mixture.

Tip
- If the dough is too soft and unable to get the right shape then mix rice flour.
- If the dough is too soft hard then add some boiled milk & mix well.
