Simple carrot raita recipe | Carrot thayir pachadi | Gajar ka raitha-How to make-Step by step photos

Ingredients
- Carrot – ½ cup [grated]
- Curd / Yogurt – 1 cup [fresh]
- Red chilli powder – ¼ tsp
- Roasted Cumin powder – ½ tsp [Dry roast cumin seeds, let it cool & grind to fine powder in a stone mortar.
- Coriander leaves – 1 spring [chopped]
- Salt to taste
For tempering / seasoning
- Mustard Seeds– ½ tbsp
- Curry leaves – 1 spring
- Ginger – ½ tbsp [finely chopped]
- Green chilli – 1 tbsp [finely chopped]
- Oil – 3 tbsp
Method
- Heat 2 tbsp oil in a pan add grated carrot sauté for 2 min then let it cool.
- In a bowl add fresh curd beat/ whisk well then add salt.
- Add red chilli powder, roasted cumin powder, and coriander leaves mix well.
- Add sautéed carrot gently mix.
- Heat oil in a pan add mustard seeds, let it splutter then add ginger, green chilli, curry leaves cut off heat.
- Add seasoned ingredients into carrot curd mixture
- Serve immediately with chapati or pulao, biryani

Grate carrot chop ginger green chilli
Add fresh curd in a bowl beat well, then add salt
Heat oil add grated carrot saute for 2 min
Carrot is ready. Cut off heat & let it cool
Add sauted carrot
Add red chilli powder, roasted cumin powder
Add seasoned ingredients, coriander leaves
Carrot thayir pachadi is ready serve immediately
