Carrot payasam | Carrot kheer-How to make-Stepwise pictures

Ingredients
- Delhi carrots [red]-1 cup [finely grated]
- Ghee [melted butter] – 3 tbsp
- Milk-1 ½ cups
- Sugar- ¼ cup
- Cardamom powder – ½ tbsp
- Raisins - 6
- Almond-5
- Cashew Nut-4
- Saffron – few
- Nutmeg powder a pinch[optional]
- Water – ½ cup
Preparation
- Heat pan with ghee then roast cashew nuts, raisins and almonds keep it aside.
- In the same pan add carrot sauté for 2 min then add milk, water, & let it boil & wait milk becomes slightly thick. Then add sugar mix well.
- Add ghee roasted cashew nut, raisins and almonds slices.
- Finally add cardamom powder, nutmeg powder & saffron then cut off heat.
- Serve hot or cold.
Tip
- For another variation of carrot payasam use condensed milk or jaggery

Delhi carrot
Finely grate
Heat pan, add ghee, roast almonds & cashews & keep it aside
In the same pan add finely grated carrot saute for 2 min
After 2 min,Carrot color changed.Perfect stage to add milk
Add milk, water & let it boil & wait till milk becomes slightly thick
When boiling add sugar
Add cardamom & nutmeg powder
Add saffron mix well then cut off heat
Transfer to serving bowl, Add roasted nuts
Garnish with almonds & ready to serve.
