Carrot beans poriyal | Carrot beans stir fry

Ingredients
- Carrot – 1 cup [chopped]
- Beans – ½ cup [chopped]
- Onion – 1 [sliced]
- Green chilli – 1 [slit]
- Curry leaves – 1 spring
- Coconut – ¼ cup [grated]
- Mustard seeds – 1 tbsp
- Bengal gram – 1 tbsp
- Urad dal – 1 tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ¼ tsp
- Coriander powder -1 tbsp
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Preparation
- Heat pan with oil add mustard seeds & let it splutter then bengal gram and urad dal. Then add onion sauté till soft.
- Add 2 tbsp coconut, green chilli and curry leaves sauté.
- Add carrot, beans & salt sauté. Then add coriander powder, turmeric powder & red chilli powder mix well. Add water cook till soft.
- Finally add grated coconut, cut off heat & serve hot with rice.
