Red rice pongal | Kerala puttu arisi pongal-How to make-Stepwise pictures

Ingredients
- Broken red rice [kerala red rice] – 1 cup
- Moong dal – ¼ cup
- Ghee [melted butter] – 2 tbsp
- Peppercorns – ½ tbsp [Crushed]
- Salt to taste
- Water – 3 cups
For Seasoning [Ingredients]
- Cumin seeds – 1 tbsp
- Pepper corns - 7
- Ginger – 1 tbsp [finely chopped]
- Curry leaves – 1 spring
- Cashew nuts - 10
- Ghee – 2 tbsp
Method
- Wash & soak broken red rice for ½ an hour. Then drain water. Dry roast moong dal.
- In a pressure cooker, add soaked red rice, dry roasted moong dal & water. Add ghee, cover it & cook 4 to 5 whistles.
- Heat pan then add ghee & seasoning with cumin seeds, peppercorns, cashew nut, ginger, & curry leaves.
- Add these seasoned ingredients, salt & crushed peppercorns to red rice mixture mix well.
- Sprinkle ghee [melted butter] & serve hot with coconut chutney or sambar.
Tip
-
For extra spicy flavor add green chilli when seasoning.

Soaked broken red rice
Dry roasted moong dal[pasi paruppu]
In a pressure cooker, add soaked red rice & moong dal
Add 3 cups of water
Add Ghee[melted butter]
Cover it & cook for 4 to 5 whistles
Perfectly cooked red rice & moong dal mixture
Mix well
Add salt
Heat pan add ghee & Seasoning with cumin seeds, peppercorns, ginger, cashews & curry leaves
Add seasoned ingredients to cooked red rice mixture
Add ghee
Mix well
Fully mixed red rice mixture
Perfectly textured red rice pongal
Finally add crushed peppercorns
Broken red rice pongal-Ready to serve-Serve hot with coconut chutney
