Moong dal sundal | Pasi paruppu sundal with tricolor capsicum

Ingredients
- Moong dal – ½ cup
- Mustard seeds – 1 tbsp
- Green chilli – 1 [finely chopped]
- Curry leaves – 1 spring
- Tricolor capsicum [red, yellow, green] – 3 tbsp [finely chopped]
- Carrot – 3 tbsp [grated]
- Coconut – 2 tbsp [grated]
- Coriander leaves – 2 tbsp [chopped]
- Lemon juice – ½ tbsp [optional]
- Salt to taste
- Oil – 1 tbsp
Preparation
- Heat oil in a pan add mustard seeds & let it splutter. Then add green chilli, capsicum, carrot & curry leaves saute.
- Add moong dal and salt sauté for 2 mins. Then add coconut, coriander leaves & sprinkle lemon juice mix well & cut off heat. Serve hot.
