Ingredients
- Barley - 1 cup
- Milk - 2 cups
- Water – 1 cup [optional]
- Saffron – few
- Jaggery – ¾ cup
- Green cardamom powder - ½ tbsp
- Cashew nuts - 3
- Raisins - 6
- Pistachio - 4
- Ghee - 1 tbsp
Preparation
- Dry roast barley. Leave it for cool & put it in a blender coarsely grind. Then wash & soak for 2 hours.
- Heat pan with ghee then roast cashew nuts, raisins, & pistachio keep it aside.
- In the same pan add milk, water, barley & cook till soft [apr 15 to 20 min]. Then add saffron & jaggery mix well.
- Add ghee roasted cashew nut, raisins, & pistachio slices.
- Finally add cardamom powder mix well &cut off heat. Serve hot or cold.
How to make Barley payasam-Stepwise photos
Heat water, milk in a pan, add soaked barley, let it boil & cook till soft
Barley turned transparent & soft. Perfectly textured
Add saffron & let the milk reduces to half
Add jaggery
Add cardamom powder
Mix well & cut off heat
Barley payasam is ready-Add saffron, Pistachios
Garnish with raisins & cashews then serve hot or cold.
