Ingredients
- Rava [Semolina, sooji] – 2 tbsp
- Carrot- ¼ cup [finely grated]
- Ghee [melted butter] – 3 tbsp
- Milk-1 ½ cup
- Jaggery – ¼ cup
- Cardamom powder – ½ tbsp
- Almond-7
- Pistachios - 5
- Saffron – few
- Water ½ cup
Preparation
- Heat pan with ghee then roast almonds & pistachios, grate then keep it aside.
- In the same pan add rava sauté for 2 min then add carrot saute for another 2 min.
- Add milk, let it boil & wait milk becomes slightly thick.
- Heat pan with grated jaggery & water let it melt & boil. Then drain impurities.
- Add jaggery syrup & cook for another 3 min.
- Add ghee roasted pistachios and almonds slices.
- Finally add cardamom powder & saffron then cut off heat.
- Serve hot or cold.
Tip
- For another variation of rava payasam use condensed milk or sugar

Heat ghee in a pan, add almonds, pistachios roast, cashews, raisins[optional]
In the same pan add ghee & rava roast
Add finely grated carrot saute for 2 min
Add ghee, saute
Add milk let it boil and thickens
Carrot rava cooked and milk reduced
Add jaggery and water let it melt
Jaggery melted and boiling, Now cut off heat & drain impurities
Add jaggery syrup
Add cardamom powder
Pour rava payasam into a serving bowl, add grated nuts, serve hot or chilled
