Ingredients
- Kambu [Pearl millet, Bajra] – 1 cup
- Ghee – 2 tbsp
- Grated coconut – ½ cup
- Jaggery – ½ cup [grated]
- Cardamom powder-1 tbsp
- Cashew nuts – 8
- Raisins [Kismiss] -10
- Warm water - 2 to 3 tbsp or as needed
Preparation
- Dry roast kambu, let it cool & coarsely grind.
- Heat ghee in a pan roast cashew nuts, raisins and then chop.
- Take freshly ground kambu in a bowl, add grated coconut, cashew nuts, raisins, cardamom powder and grated jaggery mix well.
- Drizzle enough warm water & make soft dough.
- Take a lemon size portion and fold down with 5 fingers and press gently.
- Steam it in an Idli cooker for 15 min & serve.

Kambu-Tamil/ Pearl millet-English/ Bajra-hindi
Dry roast till light brown
In a mixie jar add dry roasted kambu then coarsely grind
Freshly ground kambu powder
Heat ghee in a pan roast cashews & raisins then chop
Take a bowl with kambu powder, add raisins & cashews
Add cardamom powder
Add grated jaggery & coconut
Add warm water then make soft dough.
Take a lemon size portion of dough then fold & press gently with your fingers
Gently release the fingers.
Now you can see the pidi kolukattai shape
Place it in an idli cooker then steam it for 10 min
10 min later-kambu pearl millet kozhukattai is ready to serve
