Traditional Ada Pradhaman

Ingredients
- Ada* - 1/2 cup
- Cardamoms - 4
- Kismis - 10
- Coconut milk - 1 cup
- Nutmeg (Optional) - a small flake (Optional, Nutmeg brings sleep. So minimize the usage or on’t use)
- Cashew nuts - 10
- Ghee - 1/4 cup
- Jaggery - 100gms
* Readymade ada is available in all grocery stores. But here we make ada in a traditional way.
- Mix one cup of raw rice (Pacharisi) in water (should be thick fluid).
- Spread it in a banana leaf (Vazhai Ilai) and roll it up gently.
- Put slowly in boiling water.
- Take it out after two minutes.
- Run cold water over it.
- Unroll the leaf.
- Now the rice batter turns to spring roll structure.
- Slice it and keep aside.
(This is called ada. In case of readymade ada, boil it in hot water and drain the excess water)
Preparation
- With 1 table spoon ghee fry cashew nuts(till turns to light brown) and kismis separately and keep aside.
- Fine grind cardamom and Nutmeg flake and keep aside.
- Crush jaggery keep and aside.
- With 1 table spoon ghee fry the ada and keep aside.
- Heat the coconut milk and add ada.
- Put jaggery, cashew nuts after 5 minutes.
- Take out Ada pradhaman from fire.
- Sprinkle cardamom and nutmeg powder.
- Serve at medium hot.
Note
- Instead of coconut milk ordinary milk can be used.
Tip
- Add saffron for better taste.
