Carrot poriyal | Carrot bengal gram stir fry | Kadalai paruppu carrot poriyal

Ingredients
- Bengal gram – 3 tbsp [soaked for 2 hours]
- Carrot -2 [chopped]
- Coconut – ¼ cup [grated]
- Green chilli – 1[chopped]
- Onion – 1[sliced]
- Curry leaves – 1 spring
- Mustard seeds – ½ tbsp
- Cumin seeds – ½ tbsp
- Urad dal – ½ tbsp
- Bengal gram – ½ tbsp
- Turmeric powder – ¼ tsp
- Salt to taste
- Oil – 1 ½ tbsp
- Water as needed
Preparation
- Wash and soak Bengal gram for 2 hours. Then boil with turmeric powder till soft.
- Chop carrot and boil separately.
- Heat pan with oil add mustard seeds, cumin seeds, Bengal gram and urad dal. Then add onion sauté till soft.
- Add coconut, green chilli and curry leaves then add boiled carrot, Bengal gram and sprinkle salt mix well.
- Finally add 2 tbsp grated coconut and serve hot with rice.

Boiled chana dal ready
Chop carrot
Heat Oil , mustard, chana dal, urad dal
Add curry leaves, green chilli
Add salt
Add carrot , saute for 1 min
Add water, cook till soft
Add coconut
Add chana dal
Boil for 3 min, cut off heat
