Ingredients
- Idli rice - 2 cup
- Urad dal - ¾ cup
- Fenugreek seeds – ½ tbsp
- Rice flour - 3 tbsp
- Jaggery [grated] - 2 tbsp
- Salt to taste
- Water as needed
Preparation
- Wash and Soak urad dal, idli rice and fenugreek seeds separately for 5 hours.
- Drain water then grind to nice batter.
- Transfer the batter to a container then add sea salt, mix well ,cover it & leave it for fermentation (approximately 8 hours).
- After fermentation add rice flour and grated jaggery mix well (add water if the batter is too thick).
- Heat Dosa pan, sprinkle 1 tbsp of water then pour batter, spread the batter quickly to round shape and make sure it not too thick.
- Sprinkle oil over the dosa & cook till crisp.
- Once dosa becomes crispy fold & transfer to a plate & serve hot with chutney and sambar

How to make Crispy dosa[Paper roast dosa]- Step by step photos
Dosa batter-In a bowl add fermented dosa batter, grated jaggery, rice flour mix well
Heat iron dosa tawa, sprinkle water, pour batter
Spread the batter quickly to round shape
Pour 2 tbsp of oil around the dosa, cook till crisp and golden brown.
Use flat bottom dosa ladle
Now dosa is ready, use dosa turner & gently press all over the dosa from top to bottom evenly
Cut off heat and ready to fold.
Folded dosa- transfer to a serving plate
Crispy dosa is ready- serve hot with chutney or sambar
