Mango kulfi | Mambazha kulfi ice cream-How to make-Step by step photos & video

Ingredients
- Mango[Mambazham] – 2 or mango puree - 1 cup
- Milk – 4 cups or 1 ¼ liters
- Almonds, Pistachios – ½ cup
- Sugar or honey – ¾ cup
- Saffron a pinch
Preparation
- Peel off the mango skin then chop & put it in a blender with sugar & finely grind.
- Wash & soak almonds, cashews, pistachios for 1 hour then drain water, peel off almonds skin & coarsely grind with ¼ cup of milk.
- Heat milk in a pan & let it boil.
- Then add saffron mix well & stir continuously on low flame till the milk reduced by half.
- Add sugar or honey & ground mixture mix well & let it thickens.
- Finally add mango puree mix well, then cut off heat & let it cool.
- Then pour the mixture into kulfi moulds & place it in the freezer to set. [Apr 10 to 12 hours]
- Then unmould & serve immediately.
Tips & variations
- For instant kulfi add sweet condensed milk [Milk maid] & khoya/mava
- You can add jaggery instead of white sugar
- You can add corn flour or almond flour for creamy thick consistency kulfi
- You can add milk powder / Custard powder / coconut powder for thickness
- You can replace milk with coconut milk or fresh curd
- You can add cardamom powder or vanilla essence.
- You can add chopped mango.

Heat milk in a pan& let it boil
Soak almonds, pistachios for 2 hours, peel off the almond skin, add in a mixie jar & coarsely grind
Add milk and again grind
Almond pistachio paste mixture is ready.
Add saffron, mix well & let it thickens
Stir continuously till the milk reduced by half
Add sugar or honey [3/4 cup]
Add almond pistachio paste mix well
Mix well
Now its ready
Add freshly ground mango paste mix well, cut off heat & let it cool
Mango kulfi mixture is ready.
Pour the mixture into kulfi moulds.
Pour the mixture into small boxes
Place it in the freezer to set for 10 hours
After ten hours de-mould mango kulfi & serve immediately.
