Ingredients
- Rice – 4 cups
- Urad dal – 1 ¼ cup
- Fenugreek – 1 tbsp
- Sea Salt[Kal uppu] - 3 tbsp
- Water as needed
Preparation
- Wash and Soak idli rice, urad dal with fenugreek separately for 4 to 5 hours. Then drain water.
- In a grinder, add urad dal with fenugreek seeds & grind to smooth batter with enough water. Then transfer this batter to a bowl.
- Then add idli rice in a grinder & finely grind. Add this batter to urad dal batter mixture & add sea salt mix well
- Cover it & leave it for fermentation [approximately. 8 hours].
- Heat traditional idli kopper with water. Then wash & squeeze white cotton cloth with water.
- Then cover idli plates with wet cotton cloth, and then fill each cavity with fermented idli batter. Then steam it for 10 min.
- Then cut off heat & sprinkle water over the idils, hold the edges of the cloth, gently shake & unwrap
- Serve hot with coconut chutney and Sambar.

Idli rice - 4 cups

Fenugreek seeds-1 tbsp

In a large vessel add urad dal, idli rice batter & salt mix well. Once idli batter is ready cover it, leave it for fermentation for 8 hours.

Heat traditional idli vessel with water, let it boil, cover idli plates with wet soft cotton cloth then pour batter
Fill all cavity, place it in an idli vessel, cover it and steam it for 10 min.
After steaming perfectly cooked idlis- Sprinkle 2 tbsp of water over the idlis & unwrap
How to unwrap soft idis from cloth easily:- Hold the edges of the cloth & gently shake
Almost [ ¾ th] done
Transfer idlis to a bowl
Soft spongy idis are ready, serve hot with chutney and sambar
