Ingredients
- Thinai [foxtail millet] – 1 ½ cup
- Moong dal – ½ cup
- Arai keerai [Greens, Amaranthus Tristis] – 1 cup [washed, plucked & chopped]
- Turmeric powder – ¼ tsp
- Salt to taste
- Water - 3 ¼ cups
For seasoning [Ingredients]
- Ginger – 1 tbsp [chopped & mashed]
- Cumin seeds – 1 tbsp
- Peppercorns - 7
- Cashew nuts – 10
- Green chilli – 1 [finely chopped]
- Curry leaves – 1 spring
- Ghee – 3 tbsp
Preparation
- Dry roast thinai arisi and soak for 5 min. Dry roast moong dal & soak for 5 min.
- Heat pressure cooker, add thinai arisi, moong dal, water & ghee, cover it & cook for 4 whistles Pluck, Wash & chop arai keerai.
- Heat ghee in a pan, add chopped arai keerai, turmeric powder & salt sauté gently. Then add water cook till soft [apr. 4 min].
- For seasoning: - Heat ghee in a pan, add cumin seeds, pepper corns, ginger, green chili, cashews & curry leaves sauté then cut off heat.
- Add cooked arai keerai & seasoned ingredients in to thinai mixture.
- Add salt & ghee mix well then serve hot with chutney or pickle.

Thinai arisi & moong dal
Dry roast, wash, soak for 5 min
Heat pressure cooker, add thinai, moong dal, water & ghee, cover lid, cook for 4 whistles
After 4 whistles, perfectly cooked thinai arisi, now add salt mix well
Heat ghee in a pan add arai keerai, saute gently
Add salt & turmeric powder mix well
Add water cook till soft
Perfectly cooked, now cut off heat
Add arai keerai mixture mix well
Heat pan, add ghee
Add seasoning ingredients-cumin seeds, peppercorns
Add cashews
Add ginger, green chilli
Add curry leaves, saute then cut off heat
Add seasoned ingredients
Mix well, finally add 2 tbsp of ghee mix well
Thinai keerai pongal is ready-Serve hot with chutney or pickle
