Cauliflower soya chunks biryani | Gobi Meal Maker Biryani

Ingredients
- Basmati rice – 1 ½ cup
- Cauliflower – 1 cup
- Meal maker [Nano soya chunks] – ½ cup
- Carrot – ¼ cup [cut into small cubes]
- Onion – 1 [sliced]
- Ginger – 1 tbsp [chopped & mashed]
- Garlic – 3 [chopped & mashed]
- Mint leaves – 2 springs
- Green chilli – 1 [slit]
- Cashew nuts – 8
- Cardamom - 2
- Star anise – ½ flower
- Cinnamon – ½ stick
- Bay leaf - 1
- Fennel seeds – ½ tbsp
- Cloves – 2
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Garam amsala powder – ½ tsp
- Curd – 2 tbsp
- Lemon juice – 1 tbsp
- Butter – 2 tbsp
- Oil – 2 tbsp
- Salt to taste
- Water - 2 ¾ to 3 cups
Preparation Method
- Wash & soak basmati rice for 15 min.
- Break the whole cauliflower into medium florets.
- Take a bowl, pour warm water & add sea salt mix well then put cauliflower & leave it for 5 min then drain water.
- Take another bowl of warm water put nano soya chunks then leave it for 10 min [For softness]. Then drain water.
- Heat pressure cooker with oil & butter. Add green cardamom, fennel seeds, cinnamon stick, cloves, & bay leaves, cashew nuts & sauté.
- Then add onion sauté till light brown then add ginger & garlic.
- Add green chilli, soya chunks, carrot, cauliflower & sauté gently. Then add turmeric powder, red chilli powder & garam masala powder sauté.
- Add 6 mint leaves mix well. Then add water, salt & 2 tbsp curd mix well, & let it boil.
- When boiling add basmati rice mix gently, add mint leaves & cover it & cook for 3 to 4 whistles.
- Sprinkle mint leaves & lemon juice mix gently then serve hot with any raita.
