Pavakkai poriyal | Bitter gourd stir fry-How to make-Step by step photos

Ingredients
- Pavakkai [Bitter gourd] – 1 cup [thinly sliced]
- Mustard seeds – ½ tbsp
- Curry leaves – 1 springs
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tbsp
- Coconut – ¼ cup [grated]
- Onion – ½ [chopped]
- Garlic - 1 tbsp [finely chopped]
- Green chilli – 1 [slit lengthwise]
- Lemon juice – 1 tbsp
- Jaggery – 1 gooseberry size or 2 tbsp [grated]
- Oil -2 tbsp
- Salt to taste
- Water as needed
Preparation
- In a bowl add water, salt, turmeric powder, lemon juice & thinly sliced bitter gourd mix well & leave it for 5 to 10 min. Then drain water.
- Heat pan with oil add mustard seeds. Once it’s spluttered then add onion, garlic saute till soft.
- Add curry leaves & green chilli sauté.
- Add bitter gourd, turmeric powder, red chilli powder & salt sauté for 2 min.
- Add jaggery sauté & let it melt.
- Add water cover it & cook for 2 min.
- Then add coconut mix well & cover it cook till soft.
- Once bitter gourd well cooked & moisture out sauté for another one min.
- Finally add grated coconut, mix well & cut off heat & serve hot with rice

Bitter gourd
In a bowl add water, salt, turmeric powder, lemon juice and thinly sliced bitter gourd mix well & leave it for 5 min
Heat oil in a pan, add mustard seeds, let it splutter then add onion garlic, green chilli, curry leaves saute
Add bitter gourd, turmeric, red chilli powder & salt mix well
Saute for 2 min
Add gooseberry size jaggery, mix well & let it melt
Then add water mix well, cover lid & cook for 2 min
Add grated coconut mix well, cover lid, & cook till soft
Once moisture out, gently saute for a min
Bitter gourd poriyal is ready, cut off heat
Transfer pavakkai poriyal to a plate serve hot with rice.
