Badam puri is simple, crispy, delicious, 15 min diwali sweet without maida. Wheat flour and rava used to make puri. No soggy, No hard consistency. Perfect textured almond triangle puri. Storage- 1 month
Ingredients
Outer layer
- Wheat flour – 1 cup
- Chiroti rava - 1/4 cup
- Ghee [clarified butter] - 2 tbsp
- Almond - 2 tbsp
- Milk – 1/4 cup
- Salt - a pinch
- Water as need
- Oil for deep frying
Sugar Syrup
- Sugar - 1 cup
- Water - ½ cup
- Green cardamom -1 tsp
Preparation
- Soak almond in Hot water for 1 hour, peel off the skin
- In a mixie jar, add almond, milk, grind to smooth paste
- In a bowl add wheat flour, ghee, badam mixture and salt mix well.
- Then add water slowly to make the soft dough.
- Cover the bowl with cotton cloth then leave it for 30 min
- Sprinkle flour, place the dough on chapathi stone then roll out into large thin chapatti.
- Cur into circles, then grease with ghee, fold then make triangle shape
- For sugar syrup:- Add water & sugar in a pan mix gently & let it dissolves.
- Then add cardamom & let it boil & leave it for 7 min for string consistency then cut off heat.
- Heat oil in a pan, drop badam puri in hot oil, deep fry on medium flame.
- Once fried flip over & cook another side.
- Once its ready, remove it from oil. Drain on an absorbent paper.
- Immediately place in to the sugar syrup & leave it for 2 min.
- Then take it out & cool it in room temperature.
- Let it cool then store it in an airtight container & use within 1 month

Wheat flour badam puri
Triangle almond puri
No soggy badam puri
Add 2 tbsp Almond
Add Hot water, soak it for 1 hour
Peel off the skin
Add almonds
add 1/4 cup milk, grind to fien paste
Badam paste ready
add 1 cup wheat flour
Add 3 tbsp rava
Add 1 tbsp ghee
Add pinch of salt
Add water, make soft dough
Add 1 tbsp oil
Cover lid, keep it for 20 to 30 min
20 min later, Knead it for 1 min
Sprinkle flour, rollout into thin sheet
Perfect
Cut into circles
Remvoe extras
Grease with ghee
Fold
Sahpe triangle
Place cloves
Perfect raw badam puri ready
Drop it in hot oil
Deep fry till crisp and golden brown
Flip over, fry both sides on low-medium flame
Now its ready, remove it from oil
Add 1/3 cup sugar
Water - 1/5 cup
Boil till 1 string cosistency
Add cardamom powder, cut off heat
Place badam puri in sugar syrup mix wellPerfect glossy & crispy badam puri ready
Store in an airtight container, use within 1 month
