Sweet Somas | Karchikai | Karanji-How to make-Step by step photos with Video

Ingredients
- Maida / All purpose flour / Wheat flour– 1 cup
- Ghee – 1 tbsp
- Oil – 1 tbsp
- Salt to taste
- Water as needed
- Oil for deep frying
For filling/ stuffing
- Coconut – ½ cup [grated]
- Roasted gram [Pottukadalai] – 4 tbsp
- Cardamom seeds – 3
- Sugar – ¼ cup
Preparation Method
- In a bowl add maida flour, salt & ghee mix well. Then add water Knead it and make soft dough. Cover it & leave it for ½ an hour.
- Dry roast roasted gram for 2 min till you get nice aroma. Let it cool & put it in a mixer jar & finely grind.
- Break the cardamom shell; add the seeds & sugar in a mixer jar & finely grind.
- Heat 1 tbsp of oil then roast coconut till light brown.
- In a bowl add ground roasted gram, powdered sugar cardamom mixture & coconut mix well keep aside.
- Divide the dough into equal size balls. Sprinkle flour & roll out into thin chapatti or you can make large thin chapatti then use cookie cutter or sharp lid cut into circles.
- Place 2 tbsp of filling. Fold & Seal it and you would get half circle shape.
- Then using fork make designs around the edge.
- Heat oil in a pan then deep fry somas till crisp & light brown on medium flame.
- Drain on an absorbent paper, let it cool & store in an airtight container.
Tip
- You can add nuts, raisins, kova, chocolate chips for filling variation.
- For more crispiness you can add semolina / rava [outer layer]

In a bowl add maida and salt
Add ghee mix well
Add water, 1 tbsp of oil make soft dough, cover lid and leave it for 1 hour
Add sugar and green cardamom seeds in a mixer jar & grind to fine powder.
Sugar cardamom powder is ready [after grinding]
Dry roast roasted gram till you get nice aroma & let it cool
Add roasted gram in a mixer jar & finely grind
Roasted gram powder is ready
Grate coconut then roast till light brown.
in a bowl add ground roasted gram powder, sugar cardamom powder mix well
Add roasted coconut mix well & keep aside
Sprinkle flour, place dough on large plate then roll out in to thin large chapati & cut into small circles.
Place filling
Fold and seal it then make decorative design around the edge using fork.
Repeat the process for all circles.
Heat oil put somas one by one deep fry till crisp and light brown on medium flame
Flip over deep fry both sides then take it out
Drain on absorbent paper & let it cool
