Boondi laddu | Boondi ladoo-How to make-Step by step photos & Video

Ingredients
- Gram flour [Kadalai maavu, besan] – 2 cups
- Sugar – 2 cups
- Water – 1 cup
- Ghee – 4 tbsp
- Cloves – 4
- Green cardamom powder – ½ tbsp
- Cashews – 5
- Raisins – 8
- Turmeric powder - 1/4 tsp
- Salt a pinch
- Water as needed
- Oil or ghee for deep frying
Preparation
- Heat ghee in a pan roast cashew nuts & raisins then chop & keep it aside.
- Sieve gram flour.
- Now take the gram flour in a bowl, add pinch of salt, turmeric powder mix well
- Then add water to make it flowing consistency (Not too much watery)
- Heat enough oil in a pan then pour one ladle full of batter over the boondi ladle then gently scratch with the ladle.
- Deep fry both on medium heat.
- Once its ready take it out & drain on absorbent paper.
- Transfer boondis to a bowl & cover with lid.
- Then fry another set of boondis then transfer to a bowl.
- Heat water & sugar (1: ½) in a pan let it boil till half string consistency or one string consistency [arai kambi padham / ilam kambi padam] then cut off heat.
- Once its ready add two tbsp of ghee to avoid crystallization.
- Add green cardamom powder.
- Add fried boondi, raisins, cashew nuts, & clovesin to the warm sugar syrup & gently mix.
- Leave it for a min then again gently mix (So that the boondhi absorb the sugar syrup completely)
- Then take one handful of mixture and make a ball shaped Ladoos in warm stage
- Then let it cool & store it in an airtight container use within 5 days
Tip
- You can add nutmeg scraps and kalkandu for another variation

Boondi ladoo ingredients
Heat ghee in a pan add raisins, cashews roast
In a bowl add gram flour, salt
Add turmeric powder, mix well
Add water slowly make thick batter without lumps
Then add water make boondi batter [Flowing consistency]
For sugar syrup add 1 cup sugar in a pan
Add half cup water & let it boil till half string consistency
Sugar syrup is ready.
One string consistency, cut off heat
Add cardamom powde & ghee [to avoid crystallization]
Heat oil, take batter in a spoon, check consistency
Hold boondi ladle over the pan, pour batter gently shake
Deep fry [Dont fry for long time]
Once its reaady, remove from oil, place boondis in a bowl, cover lid, repeat this procedure for all boondis
Add sugar syrup mix well, leave it for 5 min
Add ghee for shiny texture of laddoo
Add cloves & ghee roasted, chopped nuts, raisins
Take handful of boondis, make lemon size ladoos in warm stage
Shape ladoo
Boondi laddu is ready, let it cool & store it in an airtight container use with in 5 days
