Kaja, khaja, tapeswaram kaja or Madatha Kaja is a Traditional Andhra sweet which has crispy layered sweet. This is generally made from Maida (plain flour). We added grated pistachios and almonds, ghee & rice flour for the fillings.
Ingredients
Outer layer
- All purpose flour / Maida / Wheat flour – 1 cup
- Ghee [clarified butter] - 2 tbsp
- Milk – 2 tbsp [Boiled, cooled] [Optional]
- Salt - a pinch
- Water as need
- Oil for deep frying
Filling
- Rice flour - 2 tbsp
- Ghee [clarified butter] - 2 tbsp
- Almonds and pistachios [grated] - 2 tbsp
Sugar Syrup
- Sugar - 1 cup
- Water - ½ cup
- Rose essence - 1 tsp or green cardamom - 3 or green cardamom powder - 1 tsp
Preparation
- Sieve Maida/ All purpose flour without lumps.
- In a bowl add Maida, ghee, milk and salt mix well.
- Then add water slowly to make the soft dough.
- Cover the bowl with cotton cloth then leave it for 5 min.
- Sprinkle flour, place the dough on chapathi stone then roll out into large thin chapatti.
- In a bowl add rice flour & ghee mix well. Then add grated almonds and pistachios gently mix & keep aside.
- Add rice flour mixture then spread evenly all over the chapatti.
- Then fold the chapatti tightly then cut into diamond shape.
- Then take each piece & gently press or roll out.
- For sugar syrup:- Add water & sugar in a pan mix gently & let it dissolves.
- Then add cardamom & let it boil & leave it for 7 min for string consistency then cut off heat.
- Heat oil & ghee or vanaspati in a pan, deep fry on medium hot oil.
- Once fried flip over & cook another side.
- Once balls turned golden brown & crispy take it out. Drain on an absorbent paper.
- Immediately place in to the sugar syrup & leave it for 2 min. Then take it out & cool it in room temperature.
- Once sugar syrup fully absorbed & totally dried store it in an airtight container & use within 10 days

Maida / all purpose flour
Sieve the flour
Add ghee
Add pinch of salt
Add water mix well make soft dough
Boil milk let it cool [Apr 5 tbsp]
Add 2 tbsp milk mix well
Add more water knead it
Dough is ready cover it leave it for 5 min
In a bowl add rice flour
Add 1 tbsp ghee mix well
Grate almonds and pistachios
Add grated nuts mix well
Place ghee rice flour mixture spread evenly
Now its ready to fold
Fold tightly
Cut into small pieces
Press gently
Now we can see the layers and fillings
Heat ghee and oil in a pan for deep frying
Put prepared pieces in medium hot oil & deep fry
Half fried let it fry till golden brown & crisp
For sugar syrup:- Add sugar and water mix well then boil it for 7 min till one string consistency then cut off heat
Now its ready take it out
Place fried kaja pieces to the sugar syrup & leave it for 2 to 3 min
After 2 min take it out from sugar syrup then let it cool in room temperature
Layered & nuts filled sweet crispy kaja roll
