Thenkuzhal murukku | Easy rice & urad dal flour chakli-How to make-Step by step photos

Ingredients
- Rice flour [Arisi maavu, chawal ka atta ]– 1 cup
- Urad dal – ¼ cup or urad dal flour [Ulundu maavu] – ¼ cup
- Roasted gram [pottukadalai, porikadalai] – 3 tbsp [Optional]
- Peppercorns - 4 [optional]
- White sesame seeds [Ellu] – 1 tbsp
- Cumin seeds [jeera] – 1 tbsp
- Butter – 1 tbsp
- Oil for deep frying
- Salt to taste
- Hot or Warm Water as needed
Preparation Method
- Dry roast urad dal & let it cool & finely grind then sieve it to avoid lumps.
- In a mixer jar add roasted gram & peppercorns grind to smooth powder.
- In a bowl add rice flour, urad dal flour, pottu kadalai podi/ powder, sesame seeds, cumin seeds, salt & butter mix well
- Then add warm water mix well, knead it & make soft dough [It should be soft & non sticky].
- Pour ¼ tsp of oil cover it & keep it aside.
- Heat enough oil in a pan, take murukku mould plate then place it in a muruku kuzhal.
- Fill the prepared dough in a muruku kuzhal [one handful] & just press out or squeeze over the laddle & deep fry till crisp on medium hot oil.
- Flip over & fry another side.
- Once it ready or the oil sound disappears then take it out & drain on absorbent paper.
- Leave it for room temperature [Apr. 2 min]. Then store in an airtight container
How to make Thenkuzhal Murukku / Ulundu murukku-Step by step photos
Dry roast urad dal till you get nice aroma then let it cool
Put it in a mixer jar & finely grind
Urad dal flour [after grinding] then sieve it to avoid lumps
Take a bowl add rice flour, roasted gram flour, butter, cumin seeds, asafetida & salt mix well.
Add urad dal flour, warm water mix well, knead it & make soft dough
Dough is ready, add oil & knead it again
Take murukku kuzhal, fit the murukku mold
Place handful of dough
Gently squeeze
Squeeze and shape on the ladle
Heat oil in a pan put thenkuzhal murukku & deep fry till crisp.
Flip over deep fry both side
Once its ready or oil sound disappears then take it out drain on absorbent paper.
Crispy thenkuzhal murukku / chaklis are ready, store in an airtight container
