Ingredients
- Eggplant - 1 [Large]
- Oil - 3 tbsp
- Ghee - 1 tbsp
- Garlic - 3 cloves
- Ginger & garlic paste - 1 tbsp
- Cumin seeds- 1 tbsp
- Green chilli - 1
- Onion - 1 [finely chopped]
- Tomato - 3 [Finely chopped]
- Turmeric powder - 1/2 tsp
- Red chilli pwoder - 1 tbsp
- Coriander powder - 1 tbsp
- Garam masala - 1 tbsp
- Coriander leaves - 2 spriongs [Fienly chopped]
- Kasoori methi- 1 tbsp
- Salt to taste
- water as needed
Preparation
- Wash eggpalnt then wipeout
- Slit eggplant, place garlic cloves, then add 1 tbsp oil, evenly spread
- Grill eggplant on direct flame, roast for 10 to 12 min on medium flame
- Flip over occasionally, then roast till the skin turns black in color
- Once its ready, remove it from flame then place it in a plate, cover it, leave it for 5 min
- Then peel off the skin, finely chop
- Heat pan, add 2 tbsp oil & 1 tbsp ghee
- Add cumin seeds, ginger, garlic, green chilli
- Add onion saute till soft
- Add tomato, red chilli powder, turmeric, garam masala, coriander powder
- Add salt saute till soft
- Add eggplant, and water, cook for 5 min
- add coriander,kasoori methi, cut off heat
- Serve hot with Rice, chapathi or naan

Take 1 large eggplant
Slit, place garlic cloves
Add oil, evenly spread
Roast for 12 min on medium flame
Eggplant is ready
cover with lid
Peel off the skin
Finely chop
Heat oil, ghee in a pan
Add cumin seeds
Add ginger, garlic, green chilli
Add onion
Add turmeric, red chilli, garam masala , coriander powder
Add tomato cook till soft
Add salt
Add eggplant
Saute for a min
Add water, cook till soft
Add coriander, kasoori methi
Now its ready, cut off heat
Perfect eggplant curry ready
