Verki puri is a traditional south & north indian namkeen which is round in shape, layered and crispy spicy poori. It is common in Karnataka and known as Chiroti. The shape differ a bit and ingredients too. In Karnataka they use Rava and Chiroti shape is oval. This snack is also called Surul poori, Varki poori, Layered poori,spicy phenori or Pathir Patheni
Ingredients
- Wheat flour – 1 cup
- Rava– 2 tbsp
- Ghee [clarified butter] - 3 tbsp
- Carom seeds - 1 tbsp
- Asafoetida - 1/2 tsp
- Red chilli powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Pepper powder / crushed pepper - 1/2 tsp
- Salt - a pinch
- Water as need
- Oil for deep frying [Ground nut oil, sunflower oil]
Filling
- Rice flour - 2 tbsp
- Ghee [clarified butter] - 1/4 cup
Preparation
- In a bowl add wheat flour, rava, ghee, carom seeds, red chilli powder ,pepper powder, turmeric powder, salt & water [Warm water] mix well
- Then add water slowly to make the soft dough.
- Cover the bowl with cotton cloth then leave it for 5 min.
- Divide the dough into equal size balls.
- Sprinkle flour, place the dough on chapathi stone then roll out into large thin chapatti.
- Repeat the process for all balls
- In a bowl add rice flour, ghee mix well & keep aside.
- Add rice flour mixture then spread evenly all over the chapatti.
- Layer all chapathai one by one.
- Then fold the chapatti tightly then cut into circles
- Then take each piece & gently press or roll out into thick / thin chapatti or puri..
- Heat oil & ghee or vanaspati in a pan, deep fry on medium hot oil till crisp & light brown.
- Once fried flip over & cook another side.
- Once it’s ready take it out. Drain on an absorbent paper.
- Then store in an airtight container, serve hot with tea

In a bowl add wheat flour, rava, carom seeds, turmeric ,red chilli powder, crushed pepper
Add hot ghee
Add salt
Mix well
Add water,mix well, make semi soft dough
Cover it and leave it for 30 min
Divde the dough into equal size balls
In a bowl add rice flour and ghee
Now its rady, keep it aside
Roll out into thin chapathi
Now its ready
Add ghee rice flour mixture, evenly spread
Layer chapathi one by one
Press gently
Fold all chapathi
Fold tightly
Now you can see the layers
Seal the edges
Gently roll
Cut into circles
Perfect layers
Make circles
Layered verki puri ready
Sprinkle flour
Rollout into thin/thick circles

Heat oil, drop verki puri
Deep fry till crisp and golden brown
Fry on medium flame
Flip over deep fry
Now its ready, remove it from oil
Remove all poori from oil
Drain on absorbent paper
