Pathir pheni is a tamilnadu traditional sweet which is round in shape, layered and crispy sweet poori. It is common in Karnataka and known as Chiroti. The shape differ a bit and ingredients too. In Karnataka they use Rava and Chiroti shape is oval. This sweet is also called Surul poori, Layered poori or Pathir Patheni
Ingredients
- All purpose flour / Maida / Wheat flour / Chiroti rava– 1 cup
- Ghee [clarified butter] - 2 tbsp
- Sugar – ¼ cup
- Green cardamom - 3
- Salt - a pinch
- Water as need
- Oil for deep frying [Ground nut oil, sunflower oil]
Filling
- Rice flour - 2 tbsp
- Ghee [clarified butter] - 2 tbsp
Preparation
- Add green cardamom & sugar in a mixer jar & grind to smooth powder.
- Sieve Maida/ All purpose flour without lumps.
- In a bowl add Maida, ghee, salt & water [3 tbsp of water/Warm milk] mix well
- Then add water slowly to make the soft dough.
- Cover the bowl with cotton cloth then leave it for 5 min.
- Sprinkle flour, place the dough on chapathi stone then roll out into large thin chapatti.
- In a bowl add rice flour, ghee mix well & keep aside.
- Add rice flour mixture then spread evenly all over the chapatti.
- Then fold the chapatti tightly then cut into diamond shape.
- Then take each piece & gently press or roll out into thin chapatti or puri..
- Heat oil & ghee or vanaspati in a pan, deep fry on medium hot oil till crisp & light brown.
- Once fried flip over & cook another side.
- Once it’s ready take it out. Drain on an absorbent paper.
- Place padhir peni in a bowl & sprinkle powdered sugar cardamom mixer toss it.
- Then store in an airtight container

How to make Pathir pheni / Padhir peni / Chiroti / Layered poori-Step by step photos
Maida / all purpose flour
sieve the flour to avoid lumps
Add pinch of salt
Add ghee
Add water mix well make soft dough
Add more water, mix well
Padhir peni Dough is ready cover it leave it for 5 min
In a bowl add ghee & rice flour mix well
Divide the dough into equal size balls, sprinkle flour roll out into thin chapati then place ghee rice flour mixture spread evenly
Now its ready to fold.
Fold tightly
Cut into small pieces
Sprinkle flour & gently press
Sprinkle flour, roll out into thin chapati
Add green cardamom, sugar in a mixer jar & grind to smooth powder
Heat oil in a pan, add layered poori, deep fry till crisp and light brown on medium hot oil
Once padhir peni is ready take it out, drain on absorbent paper then sprinkle powdered sugar leave it for 3 min
