Unnakaya | kerala malabar style stuffed banana fritters-How to make-Step by step photos

Ingredients
- Nendran banana-1
- Sugar /jaggery/honey -3 tbsp
- Coconut - 1/2 cup [grated]
- Cardamom powder - 1 tsp
- Almond, cashew, raisins- 2 tbsp
- Rice flour- 3 tbsp
- Salt a pinch
Preparation
- Peel off the nendran banana skin then slice.
- Steam nendran banana slices for 5 min then let it cool & mash well.
- Add rice flour, salt mix well, make soft dough
- For stuffing:- Heat 1 tbsp ghee in a pan Roast coconut, cashews, almonds, & raisins
- Add cardamom powder mix well then cut off heat.
- Add 3 tbsp sugar mix well.
- Divide the nendran banana dough into equal size balls
- Then flatten, add coconut stuffing, close it & make oval shape.
- Coat stuffed banana with rice flour mixture keep it aside.
- Heat oil/ ghee in a pan, drop stuffed banana, deep fry till crisp & golden brown
- Then serve hot.
How to make Unnakaya-Stepwise procedure with pictures
Take 1 nendran banana, peel off, slice, then steam it for 5 min
Steamed banana ready, cut off heat
Let it cool, mash
Add pinch of salt
Add rice flour, mix well, make soft dough without lumps
Heat 1 tbsp ghee in a pan, add coconut raost
Add 2 tbsp sugar
Add cardamom powder
Add nuts & raisins, mix well, cut off heat
Take lemon size balls
Flatten
Add coconut stuffing
Close it & make oval shape
Roll out into rice flour mixture, then keep it aside
Heat oil, drop stuffed banana
Deep fry till crisp and godlen brown
Crispy unnakaya ready, remove it from oil
