Chole bhature | Chola poori

Ingredients
- White chickpeas – 1 cup
- Onion – 1 [finely chopped]
- Ginger – 1 tbsp [grated]
- Garlic – 1 tbsp [grated]
- Green chilli – 1 [slit]
- Tomato – 1 [finely chopped]
- Cumin seeds – 1 tbsp
- Dry mango powder – 1 tbsp
- Chole masala powder or garam masala powder – 1 ½ to 2 tbsp
- Red chilli powder – ½ tsp
- Turmeric power – ¼ tsp
- Cumin powder – ½ tbsp [dry roast cumin seeds then grind]
- Coriander powder– ½ tbsp [dry roast coriander seeds then grind]
- Pepper powder – ¼ tsp [dry roast 3 peppercorns then grind]
- Oil – 2 tbsp
- Salt to taste
- Water as needed
For serving & garnishing
- Lemon – ½ slice
- Onion – 3 slices
- White root of spring onion – 1
Chole garam masala-Ingredients
- Cloves - 3
- Star anise – ½ flower
- Green cardamom – 2
- Black cardamom - 1
- Bay leaves – 1 [long]
- Coriander seeds- ¼ tsp
- Cumin- ¼ tsp
- Peppercorns -3
- Nutmeg scraps a pinch
- Cinnamon stick – ½
- Dry red chilli - 1
- Sugar – ¼ tsp
- Salt – ¼ tsp
Bhature | chola poori | Bhatoora-Ingredients & Method
- Maida – 1 cup
- Potato – 1 large [boiled & mashed well]
- Oil – 1 tbsp
- Salt to taste
- Sugar a pinch
- Oil – ¼ ltr [for deep frying bature]
- Mix all ingredients & make soft dough. Cover it & leave it for 20 min.
- Then divide the dough in to equal size balls then sprinkle flour then place ball then roll it & shape like circles & deep fry.
Chole Masala[gravy]-Ingredients & Method
- Wash & soak white chickpeas over night. Then boil in pressure cooker for 5 whistles. Then gently mash.
- Heat oil in a pan then add cumin seeds. Then add onion sauté till light brown. Then add green chilli, garlic & ginger sauté well.
- Add tomato sauté till soft. Then add turmeric & red chilli powder mix well. add 4 tbsp of water & let it boil.
- Add boiled chickpeas, dry mango powder, cumin, coriander & pepper powder mix well. Add water & let it boil.
- Add freshly ground chole garam masala powder mix well.
- Then cut off heat then serve hot with bature, onion, lemon slices
