Instant perfect jalebi-How to make-Step by step photos

Ingredients
- Maida / Wheat flour / Gram flour / All purpose flour – 1 cup
- Corn flour – 2 tbsp
- Curd – 2 tbsp
- Baking soda -1/2 tsp
- Ghee – 1 tbsp
- Salt a pinch
- Water as needed
- Oil & ghee for deep frying
For Sugar Syrup [ string consistency or arai kambi padam]
- Sugar - 1 cup
- Water - 1/2 cup
- Saffron food color
- Cardamom powder -1 tsp
Preparation
- In a bowl add maida, corn flour, salt, curd mix well & make smooth batter with very little water. Batter should be soft as vada batter consistency.
- Leave it for fermentation for 10 min.
- Heat water & sugar in a pan, let it boil till one string consistency [kambi padam]
- Heat pan add ghee & oil for deep frying.
- Take piping bag, pour batter
- Squeeze the batter as decorative jalebi flower shape or mini jalebis over the medium hot oil & deep fry both sides till crisp.
- Once it’s ready drain with absorbent paper & immediately place it on warm sugar syrup & soak it for 4 min then transfer to a plate.
- Repeat the process for all jalebis.
- Once it’s ready store it in an airtight container use within 7 days.

Add corn flour
IAdd baking powder
Add 2 tbsp curd
Mix well
Add water, make thick batter [slightly]
Beat well
Beat until fluffy
Add food color
Mix well
Mix well
Leave it 10 to 15 min
15 min latter
Pour into zip lock pouch
Cut the edge
Heat oil, medium flame, shape jalebi
Deep fry both crisp and golden brown
Now its ready
Remove it from oil
For sugar syrup: ad sugar
Add water
Add cardamom powder
add food color
Cook until 1 string consistency
Perfect consistency
Place jalebi in warm syrup
Soak it for 5 min
Perfect, crispy, juicy
Super delicious. best for raksha bhandan, diwali
