Foxtail millet(Thnai) of the healthiest millet in millet family. Generally foxtail millet will blend and go with jaggery always. When we make Kesari out of these ingredients this will turn out again the best & healthy sweet.
Ingredients
- Thinai rice (Foxtail Millet) – 1 cup
- Camphor (Pachai Karpooram) – less than peppercorn size
- Cardamom powder – 1 tbsp
- Cashew nuts – 5 to 6 [Ghee Fried]
- Raisins[kismiss] – 5 to 6 [Ghee Fried]
- Ghee – 1/4 cup
- Salt – a pinch
- Water – 4 cups
Preparation
- Wash thinai rice.
- Heat 1 tbsp in a pan, add cashewnuts & raisins fry then keep it aside
- Heat 2 tbsp ghee in a broad pan add thinai rice, saute for 3 min or till you get nice aroma.
- Add 4 cups of water, let it cook for 15 min[medium flame]
- Heat another pan add jaggery & 1/2 cup water let it melt for 3 min then drain to avoid impurities
- Add jaggery syrup to the thinai mixture let it cook for 5 min.
- Add 1/4 cup ghee
- Add cardamom powder & camphor
- Add ghee roasted raisins & cashewnuts.
- Finally add 2 tbsp ghee, serve hot.

Heat 2 tbsp ghee in a pan
Add thinai rice
Fry for 3 min or till you get nice aroma
Add 4 cups water
Let it cook for 15 min on medium flame
Perfectly textured thinai is ready
Ghee roast cashewnuts & raisins
Add jaggery[1 cup]
Add water[1/2 cup], let it boil for 3 min
Now its ready, cut off heat
Add melted jaggery[drain to avoid impurities]
Let it cook for another 5 min
Add cardamom powder & 1/2 mustard size edible camphor
Add ghee roasted cashewnuts & raisins
Add ghee[1/4 cup]
