How to make Pudalangai arachu vitta kuzhambu [Village style] video
Main ingredients
- Murungaikkai [Drumstick]– 4 to 5
- Onion – 1 big [sliced]
- Tomato - 1
- Mustard seeds – 1 tbsp
- Bengal gram– ½ tbsp
- Urad dal– ½ tbsp
- Curry leaves – 1 spring
- Red chilli powder – ½ tbsp
- Turmeric powder – ½ tsp
- Salt to taste
- Oil – 3 tbsp
- Water As needed
ingredients for roasting and grinding
- Sambar onion – 6 to 7
- Red chilli- 1
- Garlic - 4 cloves
- Ginger - 1 inch piece
- Tomato – 2
- Coconut – 3 tbsp [grated]
- Kongunadu masala powder - 2 tbsp
- * Heat pan with oil roast all ingredients, put it in a mixie jar, then grind to fine paste with 1/2 cup of water
Method
- Heat pan with oil then add mustard seeds, bengal gram and urad dal.
- Add onion, curry leaves, murungaikai, tomato, turmeric, red chilli powder saute for 3 min
- Add ground paste, add water mix well. Cover it and cook. Once raw smell out and boiled. Turn off heat.
- Garnish with coriander leaves serve hot with rice, idly, dosa.

Pudalangai arachu vitta kulambu
Heat 2 tbsp oil, add cumin, coriander, pepper, onion, dry red chilli, garlic
Add curry leaves, coconut
Add turmeric powder
Finely grind
Heat 2 tbsp mustard seeds, chana dal, urad dal
Add onion, garlic, curry leaves, pudalangai
Add salt
Add tomato
Add turmeric, red chilli powder
Saute for 3 min
Add water, cook till soft
Add masala powder
Add ground mixture
Add water, cook for 3 min
Add tamarind water, cook fro 3 min
Now its ready, cut off heat
Snack gourd kuzhambu ready
Perfect for rice, idli, dosa, uthappam or roast
