Main ingredients
- Garlic –10
- sambar Onion[shallots, chinna vengayam] – 6
- Fenugreek seeds - 1 tbsp
- Mustard seeds – 1 tbsp
- Bengal gram– ½ tbsp
- Urad dal– ½ tbsp
- Curry leaves – 1 spring
- Red chilli powder – ½ tbsp
- Turmeric powder – ½ tsp
- Asafoetida - 1/4 tsp
- Jaggery - 1 tbsp
- Tamarind water - 4 tbsp
- Salt to taste
- Sesame Oil – 3 tbsp
- Water As needed
ingredients for roasting and grinding
- Dry Red chilli-1
- Rice -1 tbsp
- Coconut – 2 tbsp [grated]
- Coriander seeds – 1 tbsp
- Cumin seeds – 1 tbsp
- Bengal gram– 1 tbsp
- Urad dal– 1 tbsp
- Peppercorns - 1/2 tbsp
- * Heat pan with oil roast all ingredients then grind to fine paste
Method
- Dry roast fenugreek seeds & grind
- Heat 1 tbsp sesame oil in a pan, add garlic saute till soft
- Heat 2 tbsp sesame oil in a pan , add mustard seeds, cumin seeds, Bengal gram and urad dal.
- Add curry leaves, asafoetida, onion & sauté well
- Add garlic & fenugreek powder saute.
- Add red chilli powder, turmeric powder mix well.
- Add ground paste & water mix well let it boil.
- Add tamrind water & salt let it boil
- Add jaggery mix well let it boil for 2 min.
- Then cut off heat, serve hot with rice, idly, dosa.

Garlic
Add fenugreek seeds
Dry roast till light brown
put it in a stone mortar, coarsely grind
Freshly ground fenugreek powder ready
Add chana dal, urad dal, rice, 1 tbsp sesame oil, roast
Once roasted transfer to a plate
Dry roast dry red chilli
Add cumin, coriander, pepper roast
Add coconut roast
Now its ready, cut off heat
Put roasted ingredients, coarsely grind
Add water, finely grind
Freshly ground paste ready
Add garlic
Add sesame oil, roast till soft
Now its ready, keep it aside
Add oil
Add mustard seeds
Add chana dal
Add urad dal
Add curry leaves
Add asafoetida
Add onion
Add garlic
Saute till soft
Add Fenugreek powder
Add sesame oil if required
Add ground paste
Add water
Let it boil
Add salt
Add tamarind water
Now its ready, cut off heat
