Ragi themkuzhal murukku is simple, rich, crispy, healthy, unique snack from kongunadu villages. No gram flour added. Perfect, not too hard, not too soft. we can make it only in 10 min
Ingredients
- Ragi flour [Finger millet flour, kezhvaragu maavu] – 1 cup
- Rice flour - 1 cup
- Urad dal - 1/4 cup
- Red chilli powder – 1 tsp
- Turmeric powder - 1/2 tsp
- Sesame seeds [Ellu] – 1 tbsp
- Carom seeds [Ajwain, omam]- 1 tsp
- Asafetida – ¼ tsp
- Butter – 1 tbsp
- Oil - 2 tbsp
- Oil for deep frying
- Salt to taste
- Water as needed
Preparation Method
- In a bowl add ragi flour,gram flour, red chilli powder, sesame seeds, cumin seeds, salt, asafetida, & butter mix well
- Add water mix well, knead it & make soft dough [It should be soft & non sticky].
- Pour ¼ tsp of oil cover it & keep it aside.
- Heat enough oil in a pan, take star murukku mould plate then place it in a muruku kuzhal.
- Fill the prepared dough in a muruku kuzhal [one handful] & just press out or squeeze over the medium hot oil deep fry till crisp.
Flip over & fry another side. - Once it ready or the oil sound disappears then take it out & drain on absorbent paper.
- Let it cool in room temperature [Apr. 2 min]
- Then store it in an airtight container use within 5 days.

Ragi thenkuzhal murukku
Add 1/4 cup urad dal
Roast for 5 min on low flame
Transfer to a plate let it cool
Put it in a mixie jar, finely grind
Urad dal powder ready
In a bowl add rice flour
Ragi flour
Asafoetida
Butter, sesame seeds, red chlli powder, turmeric, carom seeds
Heat water, add salt, let it dissolve
Add urad dal powder, seive without lumps
Ingredients ready to mix
Add salt added hot water, mix well
Knead it make soft dough
Add 1 tbsp oil to avoid drying
Cover lid, keep it aside
Take thenkuzhal murukku mold
Put handful dough in a murukku kuzhal
Easy squeezing
Squeeze over the plate
Shape
Drop it in hot oil
Deep fry till crisp on medium flame
Once oil sound disappears, remove it from oil
now its ready
