Beetroot sweet boondi recipe-How to make-Step by step photos

Ingredients
- Gram flour [Kadalai maavu, besan] – 1 cup
- Sugar – ¾ cup
- Water – ½ cup
- Ghee – 2 tbsp
- Cloves – 2
- Green cardamom – 3 or cardamom powder – ½ tbsp
- Almonds - 3 [grated]
- Pistachios - 4 [grated]
- Salt a pinch
- Beetroot juice- as needed
- Oil or ghee for deep frying
Preparation
- Heat ghee in a pan roast almonds & pistachios & keep it aside.
- In a bowl add gram flour, add pinch of salt then add beetroot to make it flowing consistency batter (Not too much watery)
- Heat water & sugar (1: ½) in a pan let it boil till one / half string consistency [arai kambi padham] then cut off heat.
- Add cardamom & two tbsp of ghee.
- Heat oil or ghee in a pan Hold boondi ladle over the oil pour one ladle full of batter over the boondi ladle then gently scratch with the ladle.
- Deep fry till crisp on medium heat.
- Once its ready take it out & drain on absorbent paper.
- Add fried boondi, cloves to the warm sugar syrup & gently mix.
- Leave it for 2 min then again gently mix (So that the boondhi absorb the sugar syrup completely)
- Finally add grated amonds & pistachios.
- Then let it cool & store it in an airtight container use within 5 days
How To Make Beet Sweet Boondi - Step by Step Photos
Grate half beetroot
Add grated beetroot in a mixer jar
Add water then finely grind
Drain beetroot juice
Squeeze extract beetroot juice
In a bowl add gram flour, salt mix well
Add beet juice mix well
Beetroot boondi batter is ready
Boondi ladle
For sugar syrup add 1 cup sugar
Add water cardamom pods, cook till one string consistency
Sugar syrup is ready cut off heat
Heat oil hold bbondi ladle over the pan, pour beet gram flour batter, shake & deep fry
Deep fry beet boondis till crisp
Put fried beetroot boondis into sugar syrup, mix gently, leave it for 5 min
Crispy beetroot boondi is ready, boondi absorbed all the sugar syrup, store in an airtight container
Ghee roast cashews, kismiss till golden brown, chop & add
Crispy sweet beet boondi with nuts
