Tri-color boondi ladoo-How to make-Step by step photos & Video

Ingredients
- Gram flour - 2 cups
- Baking soda- 1/4 tsp
- Sugar - 2 cups
- Water - 1/2 cup
- Cardamom - 1 tsp
- Cloves - 4
- Cashews, raisins - 1/4 cup
- Food color - orange, green
- Water as needed
- Ghee - 2 tbsp
- Oil for deep frying
Preparation
- Heat ghee in a pan roast cashew nuts & raisins then chop & keep it aside.
- Sieve gram flour.
- In a bowl add gram flour, baking soda, mix well
- Then add water to make it flowing consistency (Not too much watery)
- Divide the batter into 3 equal size bowls then add orange , green color
- Heat enough oil in a pan then pour one ladle full of batter over the boondi ladle then gently scratch with the ladle.
- Deep fry both on medium heat.
- Once its ready take it out & drain on absorbent paper.
- Fry green color, orange color boondis
- Transfer boondis to a bowl & cover with lid.
- Heat water & sugar in a pan let it boil till half string consistency or one string consistency [arai kambi padham / ilam kambi padam] then cut off heat.
- Once its ready add two tbsp of ghee to avoid crystallization.
- Add green cardamom powder.
- Add fried boondi, raisins, cashew nuts, & cloves in to the warm sugar syrup & gently mix.
- Leave it for a min then again gently mix (So that the boondhi absorb the sugar syrup completely)
- Then take one handful of mixture and make a ball shaped Ladoos in warm stage
- Then let it cool & store it in an airtight container use within 10 days
Tip
- You can add nutmeg scraps and kalkandu for another variation
