Motichoor ladoo-How to make-Step by step photos & Video

Ingredients
- Gram flour [Kadalai maavu, besan] – 1 cups
- Sugar – 1 cups
- Water – 1/2 cup
- Ghee – 4 tbsp
- Green cardamom powder – ½ tbsp
- Cashews,almonds, pistachios– 2 tbsp
- Melon seeds - 1 tbsp
- Orange foor color - pinch
- Baking soda - pinch
- Salt a pinch
- Water as needed
- Oil or ghee for deep frying
Preparation
- Sieve gram flour with out lumps.
- In a bowl add gram flour, baking soda, pinch of salt, orange food color mix well
- Then add water to make it flowing consistency (Not too much watery)
- Heat enough oil in a pan then pour one ladle full of batter over the boondi ladle then gently scratch with the ladle.
- Deep fry both on medium heat.
- Once its ready take it out & drain on absorbent paper.
- Transfer boondis to a bowl & cover with lid.
- Then fry another set of boondis then transfer to a bowl.
- Then in a mixie jae, add boondis then blend 1 sec
- Heat water & sugar (1: ½) in a pan let it boil till half string consistency or one string consistency [arai kambi padham / ilam kambi padam] then cut off heat.
- Once its ready add two tbsp of lemon juice to avoid crystallization.
- Add green cardamom powder.
- Add fried boondi,Nuts, melon seeds, in to the warm sugar syrup & gently mix.
- Cover lid, Leave it for 30 min till all the boondis absorbs sugar syrup.
- Gently mix Then take one handful of mixture and make a ball shaped Ladoos in warm stage
- Then let it cool & store it in an airtight container use within 5 days
Tip
- You can add nutmeg scraps and kalkandu for another variation

How to make Motichur laddu perfeclty ?
Add 1 cup besan, seive without lumps
Add food color
Add baking soda
add salt
Add water
Mix well without lumps
Batter ready
Heat oil in a pan, check batter consistency
Pour batter over boondi ladle
Deep fry for 50 sec [Dont fry too long]
Remove boondi from oil
Place it in a absorbent paper
Cover lid each set of boondi frying process
For tiny boondi texture, put it in mixiej ar, blend 1 sec
Dont grind too long time
Perfect textured motichur boondi ready
For sugar syrup:- Add 1 cup sugar
Add 1/2 cup water
Add pinch of food color
Mix well, boil till 1 string consistency
Check consistency
Perfect one string consistency
Add lemon juice to avoid crystallization
Add boondi mix well
Add nuts, ghee, cardamom powder
Mix well
Gently mix for 2 min
Now its ready
Cover lid
Leave it for 20 to 30 min
Now its ready
Make equal size ladoo
